How Should I Store Chocolate?

Chocolate should be stored somewhere cool, dry, and stable, ideally between 12°C and 19°C, with a relative humidity below 55%, away from direct sunlight, heat, and strong-smelling food. Both a stable temperature and staying within that range matter, since temperature fluctuations speed up bloom, while sustained heat impacts flavour and changes perceived sweetness. The fridge usually isn’t the right place for chocolate, since it introduces both moisture and food odours a stable cupboard doesn’t need to deal with.

What actually happens if chocolate is stored badly?

Poor storage doesn’t just change how chocolate looks. A 2011 study in the Journal of Food Science tracked dark chocolate stored at high temperature, both constant and fluctuating, and measured what actually happened to it using X-ray diffraction, differential scanning calorimetry, and a trained sensory panel, not just visual inspection.

The cocoa butter’s crystal structure shifted from the stable Form V to the less stable Form VI within eight weeks at a constant high temperature, and within four weeks if the temperature fluctuated as well. Chocolate stored this way came out harder, took longer to melt, tasted less sweet, and had less of its cream flavour, alongside the rougher, patchier surface associated with bloom. How should I store chocolate long term?

All of our chocolate bars at MayHawk have a “best if used by” date from production. This is the time period during which we’re confident that the flavour notes you’ll taste in our bars will be as close as possible to when the bar was first tempered. That said, the flavours in our dark chocolate, two ingredient bars, evolve over time, and some chocolate even improves with age. So how do we recommend storing them?

Storing chocolate for a few months follows the same principles as everyday storage: a stable 12°C to 19°C cupboard, wrapped in its original packaging or an airtight container, holds it well. The main risk isn’t safety, chocolate carries a best-before date, not a use-by, but the slow fading of its finer aromas if conditions drift outside that range for extended stretches, and the slow accumulation of fat bloom.

Storing it for closer to a year calls for more consistency than a kitchen cupboard can always guarantee, particularly through a hot summer. A cool, stable room, a cellar, or a similarly insulated space away from any heat source gives chocolate the best chance of holding its character for that length of time. It is also best to put it in an airtight container.

Genuine multi-year cellaring is a different case again, and it’s the one instance where a slightly colder than room temperature refrigeration can actually help rather than hurt. A standard domestic fridge isn’t suited to it, it typically runs colder than chocolate needs, its temperature and humidity cycles every time the door opens, and it holds food with strong odours cocoa butter will happily absorb. A dedicated wine fridge avoids all three problems at once: a genuinely stable temperature, held warmer than a standard fridge, in a sealed environment with nothing else stored inside to affect the flavour. That combination of stability and isolation is what makes it suitable for single-origin dark chocolate over longer periods, up to several years, something even a well-chosen kitchen cupboard struggles to guarantee indefinitely.

Chocolate made with just cacao and sugar tends to be genuinely shelf-stable across these longer periods. Chocolate with nuts or other inclusions is the exception, since those ingredients can turn rancid over an extended stretch even when the chocolate around them is stored correctly. After a year or two, even in good storage conditions, it’s possible for chocolate to start looking dull and a bit grey on the surface and acquire a brittle, chalky texture as Form V crystals naturally alter into Form VI crystals. The chocolate is still perfectly acceptable to eat, this is just chocolate bloom.

Scientific studies on chocolate storage show that stable temperatures between 12°C and 19°C and relative humidity below 55–60% preserve cocoa butter crystal polymorphism (Form V) and can help prevent and slow down fat or sugar bloom. Fluctuating or high temperatures (greater than 20°C) compromise texture and trigger recrystallisation.

  • Temperature: Keep at a constant 12°C to 19°C to maintain snap and mouthfeel.
  • Humidity: Maintain relative humidity below 55% to prevent moisture condensation and sugar bloom.
  • Environment: Store in a dark place away from light oxidation and strong aromas, as cocoa butter readily absorbs volatile organic compounds.

Should I put chocolate in the fridge or the freezer?

Neither, as a general rule. A standard domestic fridge and freezer both introduce the same core problem: chocolate coming back to room temperature from a colder environment attracts condensation, and that moisture is what causes sugar bloom. A freezer adds a second issue on top, the temperature swing is severe enough to stress the cocoa butter’s crystal structure directly, which is why frozen chocolate can have both sugar bloom and fat bloom as it thaws. If you do put you chocolate in the freezer, which we do not recommend, then the following should be observed:

  • Freezing: Research supports freezing chocolate only if it is sealed in an airtight, moisture-barrier packaging to prevent freezer burn and condensation.
  • Thawing Protocol: Transition frozen chocolate in two stages:
  • 1. First move the chocolate from the freezer to the refrigerator for 24 hours.
  • 2. Then take the chocolate from the fridge into room temperatures for 3 hours, ensuring the wrapper remains sealed until ambient temperature is reached to avoid surface condensation.

What if I have to store chocolate in the fridge?

If a stable cool cupboard genuinely isn’t available, the fridge is a last resort rather than a good option. Sealing the chocolate in an airtight container before refrigerating stops it absorbing other food odours, and letting it return fully to room temperature before opening the container, rather than unwrapping it cold, prevents condensation forming directly on the surface which can cause sugar bloom.

How do I stop chocolate melting in summer without a fridge?

The same 12–19°C target still applies, it’s just harder to hold in warm weather. A cool, north-facing room, a cellar, or the lowest, most insulated cupboard in the kitchen usually stays more stable than anywhere near a window or an appliance that generates heat. How long does chocolate last in the fridge once opened?

This isn’t really a fridge-specific answer, since the fridge isn’t the recommended place for it either way. An opened bar kept well, in a stable cupboard rather than a fridge, holds its character for months rather than days. The best-before date on the pack is the reliable reference point, not how it’s being stored in the meantime.
