We grow the fresh English garden mint leaves ourselves, organically in our greenhouse, and source a single-origin Forastero cacao through trusted, ethical, and sustainable relationships.

Inspired by the classic London Gin and Mint Julep cocktail, this chocolate captures the essence through our innovative “Absolute” method — a process developed at MayHawk to reinterpret elements of traditional chocolate making. We begin by infusing fine olive oil with fresh mint leaves, citrus peel, and natural gin botanicals, then combine this infusion with prepared cacao nibs and a large measure of London Gin.

After a further ageing process of the nibs, the result is a dark chocolate with balanced, harmonious flavours of gin, mint, and delicate citrus top notes.
