How your bar was made. Inside the process.

As the base for flavour development, we grow fresh English garden mint organically in our greenhouse and use single-origin Forastero cacao for this bar. Inspired by the classic London Gin and Mint Julep cocktails, it combines the precision of chocolate making with the aromatic layering techniques of traditional perfume production. The natural ingredients sourced and grown for this chocolate are some of the worlds finest.

The London Gin Chocolate bar is made using our olive oil “Absolute” method — an intricate process developed at MayHawk. Fine olive oil is infused with fresh mint leaves, Japanese Yuzu, Kampot Pepper, and natural botanicals, for several months, then combined with prepared cacao nibs and a premium London gin soak. This slow infusion captures the delicate aromatic notes before the nibs are refined into chocolate, creating depth without overpowering the cacao.

Through this natural gin soak and Absolute oil process, the chocolate develops clean flavours of gin, mint, delicate pepper and light citrus. The result is an aromatic dark chocolate, smooth and balanced, with the brightness of mint and citrus and the subtle warmth and spice of an iconic London gin.
