The Anatomy of the Bar

The melt arrives before the flavour does — softer, faster, more yielding than a darker chocolate. That’s the olive oil at work from the beginning, changing the physical experience before a single note registers.

What follows is deep and unhurried. The olive oil arrives deliberately late, so its grassy, peppery character survives the darkness beneath. The cacao sits low and dark, earthy and resolved. The olive oil amplifies what’s already there.

The sea-salt arrives in bursts — crystals set into the mould before the chocolate, so each one lands sharp and clean as the bar melts. A precise counterpoint to the Messenian olive oil.
