How your bar was made. Inside the process.

This chocolate focuses on a minimal ingredient list, using just five high quality components of known origin. We source cacao and cocoa butter from the Upper Huallaga Valley in Peru, unrefined cane sugar from Mauritius, sea-salt flakes from the Welsh coast, and cold-pressed, early-harvest olive oil from a family estate in Greece.

Each ingredient is chosen for its specific profile. The olive oil provides a silky mouthfeel and characteristic notes of fresh grass and pepper, which blend into the dark cacao. The addition of hand-harvested sea-salt crystals provides a sharp, bright contrast that elevates the natural sweetness of the unrefined sugar.

Our approach relies on restraint. By trusting the quality of these natural raw materials and avoiding lecithins, emulsifiers or artificial flavourings, we create a chocolate where the individual character and clarity of each origin is clearly present.
