The Winter Nine is one of our legacy chocolates, created in the very first weeks of Mayhawk as a new company in 2007. We always knew that orange and spice would be at its heart, but we could not have imagined just how much the bar would grow and evolve.
Over the years, we have continually refined both the chocolate and the natural ingredient list. While the flavour profile — orange with warming spices — has remained unchanged, we transformed the bar from a dark chocolate into a creamier oat-milk base, added large candied stem-ginger pieces, and we now grow all the chilli ourselves to complete its character. This is the smoothest, most balanced Winter Nine we’ve ever made.
