Single-origin Cacao Beans. The Midnight Seventy is a small-batch chocolate, and with each new batch we craft it using a different single-origin cacao bean sourced from regions around the world. For this limited edition bar, we’ve chosen cacao from the Grand Cru de Sambirano — grown in the lush Sambirano River Valley of north-west Madagascar. Discover more.

Crafted from just two ingredients, high-quality single-origin cocoa beans and unrefined cane sugar, this bar is one of our foundational chocolates, tracing its origins to the very beginning of the company. Nothing else is added, and nothing is allowed to dilute the character of the cacao. The processes developed specifically for this bar are designed to reveal the natural qualities of each origin.

Each small batch begins with the selection of a single-origin cacao from a particular region or environment around the world. Roasting and conching profiles are refined for each origin, maintaining a careful balance between clarity and depth, and adjusted to bring out the distinctive flavours shaped by the soil, climate, and variety of the beans.

As with all our chocolate, no emulsifiers or unnecessary additives are used. Here, everything is stripped back to what a true dark chocolate should be.

The Midnight Seventy reflects the principles that defined our beginnings: a chocolate made with restraint and purpose. An apparently simple bar, yet each new batch reveals its own character and flavour. This was the core idea we had from the start, and, years later, without compromise, it remains our best idea.
