Stripped back to just the essentials, it is made with an elegant British understanding of what we believe dark chocolate should be. Here, single-origin cocoa beans and ingredient pairings are treated with respect, allowing us to showcase the broad spectrum of flavour potential in every new batch of chocolate.

Darkness, controlled. Chocolate made to be eaten.
Each Midnight bar reaches the same place from a different start. At 90%, the Midnight Vanilla allows the Bourbon vanilla to soften the edges of the chocolate, suggesting a sweetness the bar itself never adds. It changes the perception, not the recipe. The Midnight Espresso takes a different path entirely, asking two strong and competing ingredients to find common ground — to settle into something complete.
The Midnight Seventy is the romantic one, chocolate stripped back to only cocoa beans and sugar, leaving nowhere for the origin to disappear. The chocolate is asked to speak for itself — its character, flavour and place discovered rather than buried beneath additions. Each begins with a different idea and follows a different path to the same place: dark chocolate, made to be eaten. Different roads. One destination.

Each Midnight bar is created by looking closely at a single origin of cocoa beans, and a very simple idea: dark chocolate, with a focus that shouldn’t be lost or watered down in the making. One focus. One clear flavour. This is where every Midnight bar starts.
Dark chocolate has a reputation — bitter, austere, something to be endured rather than enjoyed. The Midnight range was created to prove that wrong. The natural cacao tannins and bitterness are where we start. New methods and processes do the rest, every choice made to keep a bar this dark worth eating. The bitterness was never the problem. It just needed a better solution.
Dark chocolate in the Midnight range is an origin story at its heart. Every ingredient passes or fails on this one test. Do the key ingredients share a provenance? Cacao and coffee. Cacao and vanilla. Cacao as origin. This is chocolate entirely about place.
Start with simplicity, and what follows has structure and focus. Real ingredients. No long lists. No additions for the sake of a selling point. A Midnight bar is taken through small revisions until what’s left is only what the bar needs. Simplicity is the result, because it was the starting point.
Much of what defines a Midnight bar happens in our own Chocolate Studio. Each chocolate has its own methods and processes. Double-conching until the astringency settles. Calibrated stone-grinding over days, with each batch individually roasted to suit the origin it’s made from. The processes and methods we develop belong to us — which is why the bars taste the way they do.
The choices of sourcing behind all Midnight bars carry past the chocolate, to the people who grow the ingredients and produce the materials we use. Cacao comes from single origins, ethically sourced through partners we know and buy from on fair terms. Ingredients and materials are held to the same standard. The packaging is recyclable. None of it is the headline. All of it is the baseline.
We source from the world’s finest ingredients. And to us, an ingredient is something you can find growing and name. Real cocoa beans, real olive oil, real ginger, rum made from natural ingredients. Nothing in a Midnight bar carries the word flavouring, essence or extract, and nothing arrives with an E-number. No lecithins. No emulsifiers. If it isn’t a real ingredient, it isn’t in the bar.

A Midnight chocolate asks you to stay in the moment, while it slowly reveals itself. Let the chocolate melt — hold it on the tongue while it gives up what’s in it, slowly, a little more the longer you wait. Unhurried. Rewarded.
