The Anatomy of the Bar
The sugar is reduced. The cacao is increased. The milk is retained. This gives the bar its structural body. The crumbing process — the discipline of slowly caramelising the milk and sugar together before the cacao is introduced — develops a natural caramel sweetness that doesn’t reach for more. The sweetness is always kept in check.
What arrives is dark cacao with a remarkably creamy mouthfeel and no bitterness. The finish lingers. It’s closer to a rich Italian hot chocolate than anything the confectionery aisle has a name for. Dark cacao. Creamy finish. Nothing left to resolve.
