The cacao growing area chosen is a lowland forest in the Amazon basin, along the Huallaga River. The Criollo / Trinitario beans grown here carry a raw mineral precision that most chocolate processing would remove. Batch 0191 was roasted and conched with a single purpose: to leave that character intact.

This is a chocolate made with ingredients in quiet agreement, stone-ground over multiple days. No shortcuts are taken, at any stage, where a shortcut would have been easier. What remains is the rich flavour of the origin unchanged, and entirely itself. A clean finish, no sharp exit — low astringency and low acidity. The kind of smoothness that takes time to achieve.
