Why MayHawk Doesn’t Use Emulsifiers or Food Additives
MayHawk was founded as a reaction against the decline of mass-market chocolate — chocolate reduced to a chemistry experiment, engineered for machinery and shelf life rather than for flavour. That founding position runs through every stage of the process today: raw cocoa beans roasted, ground, conched and tempered in-house, using the fewest possible ingredients.
Food additives and emulsifiers aren’t essential to that process — they’re industrially made solutions to manufacturing problems that bean-to-bar production, made slowly and at this scale, doesn’t have. Where mass production meets a problem, it adds an ingredient to solve it. Where MayHawk meets the same problem, the process is reworked until it’s solved without one.
Nothing is added to compensate for a decision made earlier in the process, and nothing is standing between the cocoa bean and the flavour it was always capable of. What are emulsifiers, and why do most chocolate makers use them?
They’re a processing aid, not an ingredient in the culinary sense. Emulsifiers — most commonly soy lecithin and sunflower lecithin (E322) — are added to liquid chocolate (typically 0.3–0.5%) to lower its viscosity, so it flows more easily through industrial machinery. Emulsifiers are made through industrial processing methods, and sold to solve a manufacturing problem, particularly where the thickness of the liquid chocolate is an issue: see Insight 13 for an in-depth look at Emulsifiers in Chocolate. MayHawk’s chocolate contains no lecithins and no emulsifiers of any kind.
Why doesn’t MayHawk use emulsifiers?
Because managing viscosity with added ingredients changes how the chocolate tastes. Emulsification coats every solid particle at the microscopic level, which alters how flavour compounds release on the palate, producing a small but measurable flattening of flavour intensity. MayHawk manages viscosity through process instead — correct particle size, correct conching, the right cocoa butter ratio — so nothing needs to be added to compensate. No compromise is needed.
What other additives and bulking agents turn up in industrial chocolate?
A recurring set of substitutions, each solving a cost or speed problem rather than a flavour one:
- Bulk vegetable fats — palm oil and palm kernel oil, replacing some or all of the cocoa butter
- Cocoa butter equivalents (CBEs) — shea, illipe, sal, kokum or mango kernel fat, blended to mimic cocoa butter’s melt
- Secondary emulsifiers — PGPR, used alongside or instead of lecithin
- Synthetic vanillin — a lab-made stand-in for real vanilla
- Bulking agents and fillers — starches, glucose syrups, excess sugar
- Alkalising (Dutch-processing) — a chemical treatment, not an added ingredient, with a similar flattening effect on flavour
None of them appear in MayHawk chocolate.
Is avoiding emulsifiers and additives a food safety decision?
No — it’s a flavour and craft argument, not a food safety one. Industrially made chocolate containing these food additive ingredients pass all relevant regulatory standards, set by bodies including the FDA in the US, and their UK and EU equivalents, the Food Standards Agency and the European Food Safety Authority. The reason for MayHawk not using them is that each industrially processed food additive exists to compensate for a decision made earlier in the process — lower-grade beans, faster processing, cheaper fat substitutes — and each one of these additives costs something in the finished bar. Introduction to the topic
Most of the additives found in industrial chocolate exist to solve problems created by manufacturing at scale — problems MayHawk doesn’t have because it doesn’t manufacture at that scale. Bean-to-bar chocolate, made in small batches with full control over each stage, doesn’t need the additives that mass production relies on: see the Chocolate Studio page.
The most common additions, and what they’re for:
- Soy lecithin and PGPR (polyglycerol polyricinoleate) — emulsifiers that reduce viscosity and cut processing costs. Both come at a small cost to flavour intensity, because emulsification changes how flavour compounds are released on the palate.
- Bulk vegetable fats — most commonly palm oil and palm kernel oil — cheap commodity fats, grown and refined at industrial scale, substituted for some or all of the cocoa butter that occurs naturally inside the cocoa bean itself. Cocoa butter makes up roughly half the bean by weight and is by far the most expensive component to extract; palm oil and palm kernel oil cost a fraction of that, which makes replacing it one of the simplest cost reductions available to a mass-market producer. The trade-off is physical, not just economic: palm oil doesn’t share cocoa butter’s sharp, single-temperature melt, so bars made with it can feel waxy or slow to release on the tongue rather than delivering the clean, complete melt cocoa butter produces at body temperature. In several regulatory markets, once vegetable fat replaces cocoa butter above a set threshold, the product can no longer legally be labelled chocolate. MayHawk’s cocoa butter is never diluted, extended or replaced — it’s the fat the bean itself produced, used at its full proportion.
- Cocoa butter equivalents (CBEs) — a more refined substitution than palm oil, built from a blend of other plant fats — commonly shea, illipe, sal, kokum or mango kernel fat — engineered to mimic cocoa butter’s melting curve rather than simply replace its bulk. Because they’re formulated to behave like cocoa butter rather than sit alongside it, the EU’s Chocolate Directive (2000/36/EC) — retained in UK law — permits CBEs up to 5% of the finished product, provided the label states the product contains vegetable fats in addition to cocoa butter. The saving is smaller than with palm oil, but so is the compromise: CBEs come closer to cocoa butter’s melt profile without matching it exactly, and they dilute the specific fat the bean itself produced. MayHawk uses no CBEs at any percentage, refined or otherwise — a cheaper fat is still a cheaper fat, and MayHawk doesn’t make that trade to save money on the ingredient the bean already provides in full. - Synthetic vanillin — a lab-produced flavour compound standing in for real vanilla. It’s used partly for cost, and partly to mask flavour flatness in lower-quality or heavily processed cacao. MayHawk doesn’t use it — where vanilla appears at all, it’s the whole pod, not a compound standing in for it. A flavour compound exists to add back what a cheaper process or lower-grade bean has already lost, and MayHawk’s process isn’t built to lose it in the first place. - Bulking agents and fillers — starches, glucose syrups, or excess sugar used to extend a product’s volume at lower cost. Most common in lower-cost confectionery and inclusion coatings rather than in the chocolate itself. MayHawk doesn’t use fillers of any kind, for the same reason nothing else is added: a filler exists to make a product go further for less, and MayHawk doesn’t think in those terms when making chocolate. Every batch is made to the size the ingredients naturally produce, not stretched to a target cost.
- Alkalising (Dutch-processing) — not an added ingredient, but a chemical treatment that raises the cocoa’s natural pH. It softens astringency and darkens colour, but it also reduces flavanol concentration and flattens flavour complexity. MayHawk doesn’t alkalise its cocoa — the natural pH, and everything it carries, is left alone. The same flavanols are protected further by how the cocoa is handled afterwards: low-temperature stone-grinding over several days, rather than high-friction industrial milling, and roasting profiles built per batch rather than run to a standardised programme. What should I look for on the label if I want additive-free chocolate?
A short ingredient list is the strongest signal — cocoa mass or cocoa beans, cocoa butter, sugar, and little else. “Vegetable fat” in place of, or alongside, cocoa butter means a fat replacer has been used. “Emulsifier (soya lecithin)” or “E476” means PGPR. “Flavouring” or “vanillin” without the word “vanilla” or “vanilla pods” usually means the synthetic compound, not the real thing.

What does an emulsifier actually do in chocolate?

What is PGPR?

What’s the difference between chocolate and “compound chocolate”?
Compound chocolate replaces some or all of the cocoa butter with a cheaper vegetable fat, usually to reduce cost and remove the need for tempering. In several regulatory markets, a product with vegetable fat above a certain threshold can no longer legally be called chocolate.
Why do some chocolate bars use palm oil?
Cost. Cocoa butter is the most expensive component to extract from the bean, and palm oil and palm kernel oil are cheap commodity fats that can replace some or all of it — at the cost of the clean, sharp melt cocoa butter produces. MayHawk’s cocoa butter is never substituted.
Is Dutch-processed (alkalised) cocoa an additive?
Not an additive in the strict sense — it’s a chemical treatment applied to the cocoa itself, not an ingredient added to it. But its effect is similar: it trades flavour complexity and flavanol concentration for a milder, darker, more soluble product. MayHawk’s cocoa is never alkalised.
What is vanillin, and how is it different from real vanilla?
Vanillin is the dominant aromatic compound in real vanilla, produced synthetically in a lab rather than extracted from vanilla pods. It’s far cheaper and can be used to round off or mask flavour gaps in lower-quality chocolate. MayHawk uses whole vanilla, not the synthetic compound, where vanilla appears at all.
What are bulking agents, and why are they used?
