A set of four Sea-Salt Caramel Squares, handmade weekly using a traditional 70% dark chocolate shell. These individual caramels are produced with only five natural ingredients: sugar, butter, double cream, whole milk, and sea salt. Because we use fresh dairy, without preservatives or stabilisers, these squares have a three-week shelf life and are made in small batches. Out of Stock.

Note: we do not use any additives or preservatives in the ingredients, therefore the squares are made fresh each week, and by using only real cream, butter and milk, they have a shorter shelf life of 3 weeks. They can come in and out of stock quickly and therefore delivery times are estimates only.

How the Squares were made. Inside the process.

Each of our Sea-Salt Caramel Squares is a study in traditional chocolatier work. We use our house 70% single-origin chocolate to provide a thin structured shell with a gentle bitterness, which balances well with the caramel.

The caramel is slow-cooked in small batches, boiling the fresh cream, butter, and sugar to trigger a natural caramelisation that provides depth and a soft, flowing texture. By first taking the sugar to a high temperature, we avoid the trap of overly sweet caramels, instead leaning into a deeper, darker profile. We finish the caramel sauce with a measured addition of hand-harvested fleur de sel to sharpen the finish.

Our disciplined approach to these caramels means we refuse to use the additives that typically extend the shelf life of commercial chocolates. The resulting three-week window is a deliberate choice; it ensures the natural dairy remains fresh and the flavours remain clean. As these are produced in a limited weekly cycle, delivery times are estimates to ensure each batch arrives at its peak.
