Inside the process.

This is the most refined dark-milk chocolate we have ever made, distinctive in both its darker cacao forward flavour and the methods used to develop it. It represents what a true dark-milk chocolate should be: smooth and rich without compromising on either cacao bean or milk content.

Common in many aspects to the way we work, innovation plays an important role in the chocolate’s development, including a new crumbing method and the controlled use of the Maillard effect to introduce a light caramel note to the darkness. This approach allows us to maintain a higher proportion of both milk and cacao, while keeping sugar to a minimum, creating a lovely balance and depth.

The Darksome name of this chocolate comes from an Old English word meaning “becoming darker,” reflecting both its balanced character and our interpretation of what a true dark-milk chocolate should be using only natural ingredients.
