This dark chocolate and ginger bar is made around a single, considered idea, iterated upon over years of making it. Our own Rum-Soak process was born out of this exploration, calibrated over time. And it ties all of the natural ingredients together.

The ginger arrives first, as the sweet, then spiced, then slow rum warmth settles in the throat at a comfortable level, never aggressive. The large pieces of candied stem-ginger have a soft, juicy bite. With enough fibre to feel real, enough refinement to dissolve cleanly.
The base dark chocolate is a 70% single-origin cacao, processed through MayHawk’s Rum-Soak. Where the cocoa beans are steeped in a spiced rum with fresh lime zest before roasting. The rum and lime don’t announce themselves. They work underneath, elevating the spice, deepening the warmth, giving the cacao a rounded, slightly fudgy character with no bitterness and no astringency.
The dark chocolate cacao intensity arrives last. Dark, spiced, unhurried. Like being wrapped in winter solitude, even with the sun shining outside.
